What does DEF mean? Is it the definitive, ultimate experience? Is it the gold standard that all others are compared to? Is it a word that rhymes with Deaf?
Yes.
But what it really means at Def burger is nutritious and delicious food and for many items in the menu, that means coleslaw. Our coleslaw is made fresh from fresh (never frozen) ingredients. We offer three distinct versions - Original, Ranch and Blue Cheese. It was our experimentation and development of the Blue Cheese Slaw that rocked our own worlds.
It began with the slaw used in the Fish Tacos. Perfecting the recipes for both Fried and Grilled Fish Tacos required investigating every component: which were the best tortillas and how do we prepare them? What kind of fish has the right texture to hold the seasonings that we add? What elements in the slaw enhance the entire mouth experience from texture to flavor and stimulating the desire for yet one more bite? We believe our Fish Tacos have the perfect balance of flavor and textures to make you keep coming back for more!
The DEF burger
When chef Anna’s brother asked “What is THE DEF burger?” Anna replied - “80/20 mix of hamburger, provolone cheese, signature remoulade sauce, sesame seed bun and SLAW.” Coleslaw inside sandwiches had been a part of Anna’s cooking repertoire for years - part of the two “Best Pub Food” awards that she won for her previous employers. Once we recognized that it was ALL in the SLAW, we decided to investigate and explore just a bit more.
That’s when two EPIPHONIES happened: 1) Blue Cheese slaw on a burger lets you have any other cheese you want as a part of the flavor while providing bold taste and a rewarding crunch in every bite (and it eliminates the dripping of mustard, ketchup or mayo on your shirt). 2) You will never want carrots or celery sticks with your wings again.
“But I don’t want any slaw. I don’t like slaw.” The Def burger includes slaw, otherwise it’s just a burger. But if you don’t want your slaw to touch your burger, just say “no slaw please” and we will give you slaw in a separate container “on the side.” You’re still getting slaw... its up to you to try it... you might find out that you LIKE it.
DEF Wings & Slaw
Lets talk about those wings. Traditionally, you toss your wings in a sauce, Mild Buffalo sauce, for example (we mix our own recipe). Then you look at your little plastic cups of ranch or blue cheese dressing and you dip the pointy end of a wing in the sauce as far as it will go... you now have one third of a wing sitting in a white sauce that does not stick very well to the first sauce. As you remove the wing from the tiny sauce cup and try to eat it, some white sauce drips on your shirt and does NOT make it into your mouth; and a swirl of orange has contaminated your little plastic cup of sauce. This is the problem with trying to put sauce on something that already has sauce on it. Who came up with that idea?
Now enter the twenty-first century and Def Wings. You look at your plate and you see mouth-watering wings, well-tossed in great sauce. You also see a large mound of healthy, tasty slaw THAT ALREADY HAS RANCH or BLUE CHEESE DRESSING IN IT. You take a fork-full of slaw and put it in your mouth (the white sauce sticks to the slaw). Now you grab a wing and take a healthy bite out of it. FLAVOR EXPLOSION in the mouth! No sauce-on-sauce mess (it’s AMAZING!) No annoying strands of celery stalk in your teeth.
