This is NOT your Father’s Cole Slaw
- Crunchy Vegetable Slaw -(cabbage, carrots, red onion, Italian parsley)
It’s All In The SLAW
Back in 2015 a Deaf Chef (THE Def Chef!) noticed that the kitchen storage room had an excess of Blue Cheese that would soon need to be either used or discarded. Being a conservator of resources, she thought about punching up the restaurant’s boring cole slaw with a little blue cheese action. When she mentioned this to her manager, the reaction was entirely negative. “Don’t do it. Nobody will like it. It will be a waste of the blue cheese.”
You guessed it. She did it anyway. But only for herself and her coworker/chef. They both thought that the Blue Cheese Slaw was a fantastic addition to their hamburgers. But they never made it available to their customers because the manager “knew so much” about what the customers would and wouldn’t like.
After being rejected in her efforts to become the kitchen manager (the head manager thought Anna was joking... “how could a deaf person manage a kitchen?”) Anna immediately applied to be a chef at the restaurant next door. She was hired immediately!
Anna eventually proposed the Blue Cheese Slaw to her new manager and received the same reaction. So no one in central New York state got to experience the magic of Blue Cheese Slaw in their burgers (except our Def Chef!)
Fast forward to 2022. While brainstorming a concise and efficient menu for her own restaurant, Anna reached back to the idea of Blue Cheese Slaw on a burger. We knew immediately that her burgers would be slaw-topped rather than the boring traditional four veggies (lettuce, tomato, onions and pickles). This is why we will serve you Slaw (regular, Blue or Ranch) on the side when you say you don’t want any - you REALLY need to taste this and then you’ll be HOOKED!
Ketchup? We don’t need no stinking Ketchup!
Customers keep asking us if we have any ketchup. Nope. Instead WE HAVE THREE GREAT-TASTING SAUCES. Try them all and find your favorite. We want to elevate your eating experience. If you wish to use boring old ketchup, please bring your own. It’s OK... you can elevate your eating experience the next time.
So then we moved on to the Wings. “Hey!What about combining the slaw with the wings?” Papa said. “Blue Cheese slaw, eh? Could you make a Ranch slaw?” and of course, the answer was delicious.
So now you know... the rest of the story.
When Publix and Kroger start selling Blue Cheese and Ranch Cole Slaws, don’t forget that it all began in the creative mind of the worlds most Def Chef! - Anna Cerney.
